Ingredients

â–¢ 4 salmon fillets about 6 ounces each

â–¢ 1/2 teaspoon salt or to taste

â–¢ 1/2 teaspoon pepper or to taste

â–¢ 2 tablespoons olive oil

â–¢ 2 tablespoons lemon juice freshly squeezed

â–¢ 1 teaspoons dried tarragon

Instructions

1.  Prep the oven and baking sheet. Preheat the oven to 400°F and grease a baking sheet with cooking spray.

2.  Season salmon. Place salmon fillets on the baking sheet and season with salt and pepper.

3.  Brush salmon with tarragon sauce. In a small bowl combine the olive oil, lemon juice and dried tarragon. Brush the olive oil lemon mixture generously over the salmon fillets, top and bottom.

4.  Bake. Transfer the baking sheet to the oven and bake for 12-15 minutes or until the salmon is opaque and flaky. If you prefer a bit of golden color over the top, you can broil for 1 to 2 minutes, but be careful as they can burn quickly.

5.  Garnish and serve. Garnish with lemon slices if desired and serve.

6.  Sprinkle with mozzarella cheese and parsley if preferred. Serve while warm.
