Greek Pasta Salad

This simple Greek Pasta Salad recipe paired with a homemade dressing is fresh, bright, and filling. It's a perfect contribution for your next potluck or for your dinner table on a busy weeknight.

â–¢ 12 ounces of penne uncooked, or any other pasta of your chouoce

â–¢ 2 cups cucumber chopped 

â–¢ 2 cups grape tomatoes halved

â–¢ 1 green bell pepper chopped

â–¢ 1/2 cup olives

â–¢ 1/2 red onion chopped

â–¢ 1 cup tomatoes chopped

â–¢ 1/2 cup feta cheese crumbled

Dressing

â–¢ 1/4 cup red wine vinegar

â–¢ 1/3 cup olive oil

â–¢ 2 tablespoon lemon juice freshly squeezed

â–¢ 1/2 teaspoon garlic powder

â–¢ 1 tablespoon fresh oregano 

â–¢ 1/2 teaspoon salt or to taste

â–¢ 1/2 teaspoon pepper or to taste

Instructions

1.  Cook the pasta according to package instructions until it’s al dente (cooked until it’s still firm when bitten). Drain and set aside.

2.  Melt the butter in a large skillet over medium-high heat.

3.  Add the chicken to the skillet, then sprinkle with the chili powder, red chili flakes and season with salt and pepper. Cook until the chicken is no longer pink and is cooked through, should take about 5 minutes.

4.  Add the tomatoes, green onions and parsley. Stir and cook for another 2 minutes.

5.  Add the half and half, chicken broth and cook until it comes to a boil.

6.  Add the rotini pasta and stir everything together.

7.  Sprinkle with mozzarella cheese and parsley if preferred. Serve while warm.
